As anybody who raises poultry knows, there are time of the year when you just can not fill all of the orders and other times when there is little demand, especially to the local market for guineas or keets as pets or even for insect control. In order to keep things at a balance on our ranch, it is at these times we choose to "utilize" extra birds, especially extra male birds for their meat. We firmly believe in using meat that has been humanely raised and free- ranged and has had a happy, healthy life and was processed as humanely as possible, over grocery store poultry, that did not.
There has been an increasing demand for guinea fowl meat recently. The meat of a young guinea is tender and of especially fine flavor, resembling that of wild game, and therefore has been substituted for game birds such as grouse, partridge, quail and pheasant without excessive gamey flavor. Guinea fowl has a taste similar to other game birds and has many nutritional qualities that make it a worthwhile addition to the diet. Guinea offer exceptionally high yields -a 50/50 ratio between meat and carcass: these are moist and meaty birds! They are also substantially leaner than chicken. Chefs and home cooks seek them out because of their marvelous flavor; in restaurants, they are often chosen over pheasants because they have fewer tendons in the leg and thigh, making this part of the bird more versatile and cost effective.It is second only to turkey in calories, having 134 Kcal (Calories) per 100 grams (turkey has 109 Kcal).
